Yibin Burning Noodles, formerly known as Xufu Burning Noodles and formerly known as deep-fried dough sticks Noodles, originated from Sichuan Province, Sichuan Province and Yibin City. It is a traditional Yibin snack and belongs to Sichuan cuisine.
Yibin Burning Noodles originated in the Qing Dynasty and won the gold medal of “Sichuan Famous Snack” and the title of “Chinese Famous Snack”. In 2011, it was selected as an intangible cultural heritage of Sichuan Province. In 2015, it was broadcasted as a special snack on the program “China on the Tongue”.
Because its oil is heavy and water free, it burns when ignited, so it is called Burning Noodles. It uses local high-quality alkaline noodles as the main ingredient, and takes Yibin broken rice sprouts, small grinding sesame oil, fresh plate chemical oil, anise, shannai, sesame, peanuts, walnuts, Jingtiao pepper, superior Chinese prickly ash, monosodium glutamate, and chives, pea tips or spinach leaves as the auxiliary ingredients. It is cooked, picked up and dried to remove the alkaline smell, and then refueled with seasonings according to the traditional process.
